Cauliflower Walnut Tacos

Cauliflower and walnuts are definitely an odd combination, but together they make the most amazing taco filling that truly looks life beef (for those of us who need to fool our friends). Most important, I love the texture and flavor. There are so many vegan cooks making this interesting combination as a meat substitute and it is truly genius! I’m quite sure you can use this filling for so many other recipes. I’m planning on using it for: salad toppings, stuffed peppers, pizza, raw collard wraps, Mexican Lasagna, and many pasta dishes.

Overnight Oil-Free Granola

Finally, a painless way to make delicious healthy oil-free granola without the burning when you forget to stir! Kathy Rayneard, CHIP Facilitator and PCRM instructor, gave me a large jar of this delicious granola which was developed by dedicated CHIP leaders in SW Florida. CHIP stands for Complete Health Improvement Program which promotes and educates people on the benefits of a Whole Foods Plant Based lifestyle. I love to add this granola to a plant based yogurt or top my oatmeal with this crunchy delightful addition.

Growing up in Upstate New York meant that there were plenty of apples in the fall. I had the added benefit of living near Cornell University and where they have some amazing orchards and the best cider and apples ever! This apple butter is perfect for breakfast toast or just adding to a bowl of oatmeal instead of maple syrup for a sweetener.

Carrot Dogs

When I first saw this recipe all over the web, done in a variety of ways, I thought it sounded very strange. But, just the same I had to give it a try because I'm an adventurist with plant based foods. Surprisingly, it's very good! Even my carnivore friends loved them! So I'm joining all the vegan foodies out there and sharing our favorite carrot dog recipe. I am not sure where this idea originated from, but much thanks to the creator.
