Classic Red Chili

A big pot of traditional chili is always a popular dish. This recipe is loaded with veggies and beans and a medley of sweet, spicy, and savory flavors. It also makes a wonderful slow cooker recipe, since the longer you cook any tomato-based sauce, the richer the flavor.

Thai Curry Bowl

A Bowl style meal is extremely popular and often the most ordered food in a restaurant! A bowl needs balance, flavor combinations, color, texture, and simplicity. Think of a bowl in four components: starches, vegetables, sauce, and (plant based) proteins. With those four components, anyone can build a simple bowl that ranges from traditional comfort food to something more unique and original!

Cauliflower Walnut Tacos

Cauliflower and walnuts are definitely an odd combination, but together they make the most amazing taco filling that truly looks life beef (for those of us who need to fool our friends). Most important, I love the texture and flavor. There are so many vegan cooks making this interesting combination as a meat substitute and it is truly genius! I’m quite sure you can use this filling for so many other recipes. I’m planning on using it for: salad toppings, stuffed peppers, pizza, raw collard wraps, Mexican Lasagna, and many pasta dishes.

Spinach Mushroom Quiche with Potato Crust

I love a quiche but often struggle with the rich, fatty crusts that go with them. This quiche has a shredded potato crust that is light and delicious. It’s perfect for breakfast or dinner.

Red Lentil Dahl – Instant Pot

Red Lentils become quite creamy and thick when fully cooked, which makes them perfect for soups, stews, and sauces. You also can easily find red lentils at most grocery stores. This dish has the perfect combination of coconut, curry, and a slightly mild spice for the perfect Indian recipe.

Dahl is an Indian term for a spicy lentil style porridge. I love to add a variety of colorful veggies to this recipe making it a meal by itself. PlantPure also offers a Red Lentil Dahl in their new Kitchen Starter packs. The starter pack provides the red lentils and the unique blend of other dried ingredients.

Homemade Burritos

This is our go-to meal when we don't feel like making anything too complex. It's similar to comfort food for us and Todd asks for it all the time when he's stressed at work. Because it pairs well with red wine, we serve it to friends and family when we get together, and everyone absolutely loves it. You can add nutritional yeast to the top to replace cheese if you desire, but it's just as good without.
